1. RINSE AND PREHEAT
Place the filter in the brewer.
Rinse the filter with hot water to get a nice even seal all the way around. This also preheats the brewer. Dump the rinse water.
2. BLOOM
Center the ground coffee in your brewer and zero out the scale.
Start the timer when you add the hot water. Pour until you reach about 40ml. Make sure all the grounds are saturated.
3. ADD WATER
At 0:25 start pouring water gently in circular movements until the volume reaches 150ml in total.
4. ADD MORE WATER
Before the coffee runs dry, start the second pour, making sure to reintegrate the coffee and water. Pour gently in circular movements until you reach 320ml in total.
5. REMOVE THE FILTER
Around 3:40 the water should almost have run through the coffee. Remove the filter before the coffee runs dry.
6. SWIRL, SERVE AND ENJOY
